If you grow zucchini, keep an eye on them as they grow and pick them when they’re about 8 inches long for this tasty and easy one-dish meal.

For one serving:
- 1 medium zucchini, spiralized (or use a vegetable peeler to create ribbons) and then cut (I use scissors) unless you’re okay with 2 foot long zucchini noodles!
- 1 – 2 cups chopped tomatoes (feel free to use a variety as I have done here with our garden tomatoes)
- 3 Tbs ground cashews (I added ground pumpkin seeds as well, about 1/2 and 1/2)
- finely chopped greens (I used baby swiss chard, french sorrel & arugula but finely chopped kale and spinach would be good too)
- finely chopped herbs (I used lots of basil, and some oregano and thyme)
- 1 garlic clove, minced
- 2 Tbs chopped onion (I used spring onions but red onion would be good too)
- Optional: sliced olives and sweet peppers, salt and black or hot pepper.
Toss it all together and voila! Enjoy!
